No Mayo Potato Salad

Serves 8

Who needs mayo when a potato salad tastes this good? Not me...

Ingredients

  • 1 tablespoon salt
  • 2 pounds small white or red (or both) potatoes
  • 1/2 cup celery, diced
  • 1/3 cup green onion, diced
  • 1/2 cup red onion, diced small
  • 3 tablespoons parsley
  • 5 hard boiled eggs, peeled and sliced
  • 10 pieces bacon, crispy and diced up
  • 1/3 cup bottled Honey Mustard dressing
  • Salt & pepper to taste

Steps

  1. Bring a large pot of water to a boil, add salt and potatoes
  2. Cook until potatoes are tender enough to poke a knife through easily
  3. When the potatoes are cool enough to handle, cut into quarters and put in a large bowl
  4. Add everything else and mix well
  5. Serve cold or at room temperature
