White Bean Chicken Chili

We make this every year for Halloween because it's a nice change from regular chili and really delicious. Plus, it's perfect to put in a mug to eat while you are trick or treating - I mean while the kids are trick or treating. And when we make it, our friend Doug comes down from his house like a Pavlovian dog as soon as it's ready (with his own mug even).

Ingredients

  • 1 small yellow onion, chopped
  • 4 cloves garlic
  • 4 cans Great Northern White Beans
  • 1-4 ounce can diced green chilies
  • 2 cups cooked shredded chicken
  • 2 cups chicken broth
  • 2 teaspoon cumin
  • 1 teaspoon cayenne
  • 1 teaspoon oregano

Steps

  1. Drain beans
  2. Saute onions and garlic with butter until soft
  3. Add everything else and you're done.
  4. Well, you need to simmer it all to let it warm up.
  5. Serve in a mug with some fresh chopped parsley on top.
  6. Wait 15 minutes and Doug will be over.
