Baked Chicken Taquitos
Makes 12
Just like at your favorite taco shop, but you bake them instead of deep frying. And you can make and eat them at home in your jammies. Nice huh?
Ingredients
- 2 cups Shredded deli roasted chicken
- 1/3 cup green salsa
- 1/2 cup Monterey Jack cheese, shredded
- 12 corn tortillas
- Olive oil
- Chicken broth, about a cup
- 3 tablespoons sour cream
- 1 tablespoon chipotle pepper, minced
Steps
- Preheat oven to 425
- Combine chicken, salsa and cheese in a large bowl - mix well
- Dip tortillas in chicken broth, add some chicken, roll up tight and place on a baking sheet
- Brush lightly with oil and bake about 25 minutes or until just beginning to brown at the edges
- Mix sour cream and chipotle - serve on the side
